Class Summary - Today students took a quiz including the carbohydrate information from last class period. Then we talked in class about proteins. Proteins are made up of molecules called amino acids. The combination, order and amount of amino acids put together determine what the protein does (make skin, insulin, muscle etc.). There are 20 different amino acids that our body uses to build tissues and hormones that your body needs. 11 - nonessential amino acids- of them we just make being humans. We don't even think about them and they are made. 9 of them - essential amino acids, we have to get from the foods we eat. If we are missing any of these 9, we can't just make them, so something will go haywire (lose hair, get sick etc.). Complete proteins contain all 9 of the amino acids that we need. Examples of complete proteins are; any animal product like milk, eggs or meat. Soy is the plant exception to the rule and is a complete protein. Incomplete proteins do not have all 9 amino acids but do have some. These are foods like nuts, seeds and beans. Vegans, who don't eat any animal products whatsoever can get all 9 amino acids by eating combinations of foods to get all 9.
